Bawinanga Spice Mix launch

Bawinanga Aboriginal Corporation through Maningrida Wild Foods launched their spice mix in September at Charcoal Lane restaurant in Fitzroy Melbourne.  The spice is made in Maningrida using Kakadu plum (billy goat plum or man-marlak- the traditional name for the plum) which is harvested and made into powder locally.  The Kakadu plum powder is mixed with other spices to make Mardanggich which can be used as a rub for meats or flavouring for vegetables. Some fantastic dishes produced by Charcoal Lane using the spice mix were on show for tasting.
